In January, the Englouvi women, wearing traditional costumes, sow the lentil seeds "with the pagan spirits." The seeds sleep under the snow, and the women return in springtime to weed them. In summer, when the lentils mature, they harvest and thresh them by hand, retaining the seeds for next year's sowing. The women are diminishing. The Volti are crumbling. The Plateau must be preserved for its unique natural beauty, architecture and human activity.
